Patatas Meneadas

Ingredients for 4 persons:

  • 8 middle - size potatoes
  • 500 gram. bacon or dewlap
  • Red paprika
  • Garlic
  • Caraway
  • Laurel
  • Salt

Preparation:

First peel the potatoes and cook them in water together with the laurel, use a casserole or a pan, but preferably the last one.

Once the potatoes are cooked, press them with a wood spoon and let them cool. Fry the bacon or the dewlap in another pan, until it becomes transparent and keep it by side.

The dewlap is better because it gives the meal more flavour. Add the paprika, the garlic and the caraway to the pan with the rest of fat and let it steams for a while. Mix it then with the potatoes squashing it until you get a puree.

Serve this meal in a earthen casserole.
